Founded in 1987 by Pascal Jolivet, Pascal Jolivet has become one of the Loire Valley’s most respected producers, known for crafting wines defined by purity, precision and elegance. Initially established as a négociant, the house expanded with the construction of a modern, state-of-the-art winery in Sancerre in 1990, equipped with temperature-controlled stainless steel tanks inspired by Champenois winemaking facilities.

The domaine was further established in 1993 with the acquisition of six hectares of prime vineyards in Bué, one of Sancerre’s most renowned terroirs, including Le Chêne Marchand, Le Grand Chemarin and La Plante des Prés. These sites form the foundation of the estate’s terroir-driven approach.

Winemaking at Pascal Jolivet follows a natural and minimalist philosophy, often described as “bio vinification.” After gentle settling, fermentations are carried out using indigenous yeasts, allowing each wine to develop its authentic character. Ageing on lees plays a key role in building texture and complexity, while long, slow fermentations help stabilise the wines naturally, requiring only minimal use of sulphur.

The wines are celebrated for their clarity, freshness and mineral expression, offering a refined and contemporary interpretation of Sancerre and the Loire Valley.
