Winemaking
The grapes are hand-harvested and carefully sorted in the vineyard, followed by a second sorting at the winery. At least two-thirds of the harvest is vinified using whole clusters in truncated cone-shaped wooden vats (45 HL). The maceration takes place slowly, with gentle pump-overs that allow the juices to infuse delicately, focusing not on extraction, but on finesse and elegance. The wines are then aged in wooden vats for 8 months.
