Indigene is one of our most iconic wines, and a unique interpretation of Pouilly Fume. A wine that is characterised by a generous, almost velvety texture, framed by a refreshing acidity and savoury minerality.
Winemaking
The grapes are harvested manually and whole bunches are pressed before vinification. The musts are then cold settled and transferred in temperature-controlled stainless steel vats to complete their fermentation with naturual yeast. The wine is then aged for 9 months on fine lees before bottling. No filtration or (coller – don’t know how to translate), are used.
