The 2021 Logan Vintage ‘M’ Cuvée is a pale copper gold colour with fine, lively bubbles. Aromas of wild strawberry, beeswax, buttery sourdough and marzipan. Lemon and green apple on the dry, crisp slightly chalky palate, with a lingering finish.
Winemaking
Grapes were harvested at night and gently pressed using an airbag press. Both varieties were co-fermented, with 5 hours of skin contact. Around 90% was clarified and fermented in stainless steel with wild yeast over 21 days, while 10% was fermented in French oak puncheons. The wine was then bottled for secondary fermentation, aged on lees, and disgorged in September 2023 with no dosage.
