The Sorriso® is our only white wine and it’s a blend of 40% Chardonnay, 40% Sauvignon blanc and 20% Viognier. The grapes come from two vineyards of ours that were planted in 1997: one is Altenasso vineyard located in Castiglione Falletto and the other one is Bricco Manescotto vineyard from La Morra. Our entire property is within the Barolo area, where there is not a tradition for white wines neither major indigenous white grapes. Therefore, we decided to make a different blend which reflected our passion for these transalpine grapes. The grapes are vinified separately and in stainless steel to highlight the varietal characteristics. The Chardonnay brings dimension, Sauvignon the most citrus and exotic perfumes and Viognier brings tannins as well as more floral mineral perfumes and gives a certain density.

Winemaking
Vinification: Separate vinification of the grapes. Soft pressing, 12 hours decantation at low temperatures 10°C (50°F) then alcoholic fermentation in stainless steel at approximately 16°C (60 °F) for about 20 days. No malolactic fermentation to preserve the natural acidity. Before the tartaric stabilization which is induced naturally by the low winter temperatures, we make the blend.
