The 2021 Colton’s GSM has mouth filling texture provided by Grenache which is rounded out by the structure and density characteristic of Shiraz and Mourvèdre. Subtle use of oak allows the fruit to shine through to reveal attractive hints of boiled fruit cake with cinnamon and cloves. A beautifully round palate with silky tannins, this wine has lovely persistence and length.
Winemaking
Each component was pressed prior to reaching full sugar dryness on skins to retain fine, long, and elegant tannins. The Grenache-dominant blend is matured primarily in seasoned oak, as this style benefits from a more subtle oak influence. The individual components were matured separately before final blending to achieve balance and complexity.
