Domaine Lucien Le Moine

Founded in 1999 by Mounir Saouma and Rotem Saouma, Lucien Le Moine is a unique Burgundy house dedicated to producing wines of exceptional precision and terroir expression. Based in Beaune, the domaine focuses exclusively on Premier and Grand Cru wines, working with extremely small volumes—often just one to three barrels per vineyard—resulting in a highly limited and meticulously curated production each vintage.

The concerted aim of the house is to produce no more than 100 barrels of Premier and Grand Cru wines each year, with the final selection varying depending on quality. Mounir Saouma tastes each vineyard individually, retaining only those that meet his exacting standards. In some cases, this may mean securing just a single barrel from a given site; for example, the 2017 vintage comprised around 100 barrels across 68 different wines.

Rather than operating as a traditional domaine, Lucien Le Moine specialises in élevage. The wines are sourced immediately after pressing and are then aged entirely in-house, allowing Mounir and Rotem to shape each cuvée from the earliest stage of its development. With no blending between barrels, each wine reflects the pure identity of its origin, making precision at every stage essential.

The élevage process lies at the core of the house philosophy. All wines are aged in custom-made barrels crafted from fine oak sourced from the Jupilles forest, with individual toasting tailored to each cru and vintage. Ageing takes place on full lees with regular bâtonnage, enhancing texture, complexity and balance. The wines are neither fined nor filtered and are bottled by gravity, preserving their natural structure and energy.

The resulting wines are powerful yet precise, combining depth with remarkable purity and mineral expression. Known for their intensity and ageing potential, Lucien Le Moine offers a distinctive and highly artisanal interpretation of Burgundy’s greatest terroirs.
