Champagne Ayala
Founded in 1860 by Edmond de Ayala in Aÿ Grand Cru, Champagne Ayala is recognised as one of the pioneers of low-dosage Champagne, defined by a style of precision, purity and elegance. The house is dedicated to expressing the essence of Champagne’s terroir with minimal intervention, allowing the quality of the fruit and the character of each cru to take centre stage.
Chardonnay plays a central role in the Ayala style, forming the backbone of all cuvées and bringing freshness, linearity and finesse. The house works with an extensive palette of around 70 crus across Champagne (over 50 of which are Chardonnay) complemented by estate vineyards in Aÿ, Dizy, Chouilly and Oger. This diversity of terroirs allows for highly detailed and balanced blends, combining aromatic purity with complexity.
Vinification is carried out with exceptional precision using more than 120 small stainless-steel vats, enabling parcel-by-parcel fermentation and micro-vinification of individual crus. This approach allows the house to preserve the distinct identity of each vineyard before blending. A carefully maintained library of reserve wines adds depth, texture and consistency across vintages.
A defining element of the Ayala style is its minimalist dosage, made possible by extended ageing on lees (typically ranging from 3 to 12 years or more), which develops complexity while maintaining freshness and balance. The wines are crafted without artifice, with a focus on natural ripeness and clarity of expression.
Today, Champagne Ayala continues to uphold its philosophy of “honouring the essence,” producing refined, Chardonnay-driven Champagnes that are both precise and expressive, offering a modern yet authentic interpretation of the region’s finest terroirs.
